Traditionally you break the leaves over the developing curds to keep light off....but they might also be bolting...if little flowers start popping out eat them quick.

        Grey doesn't sound great.

I had a couple of heads go brown and smelly this year - disgusting!

Some do go a bit yellow naturally - try some different varieties.

Caterpillars in the florets will come out if you soak the cut head in well salted water. It's worth warning the diners, too, though.

I was given the tip of body temperature water with white vinegar in for my lettuces and cabbage to get rid of the caterpillars...works a treat. Just leave them soaking for about 20 minutes or so..

Cut the cauli into florets as required for cooking and put them in the water - usually the majority of caterpillars will float out, but check by looking closely into the floret stems, too.
