Can you feed the soil to change the sweetness of onions, or is it the variety that makes the difference and if it is the variety what recommendations would you makes

I've heard that the more sulphur the more bite - perhaps if your soil is acidic a bit of lime or fresh wood ash might counteract the acid and sweeten up the onions.

Torpedo onions like Long Red Florence are nice and sweet with a distinctive taste of there own.

Rary, do you grow from sets or seeds? If you grow from seeds, Dulce de Fuentes (Fuentes Sweet) are lovely. Can grow quite big but always stay sweet. Used here as a salad onion as well as for cooking. Storage max three months in my experience. I start to pick them as soon as they reach a size I find usable and then harvest what's left at the end of the season all at once. Seeds available from Moreveg.

Thanks Snoop I will try and get some seeds and give them a try along with the ones Snadger recommendsit may be a struggle to reach the top, but once your over the hill your problems start.

If you see Figueres/Figueras or Moradas de Amposta seeds you could try those too. I love them. The Figueres last longer in storage than the Dulce de Fuentas and the Moradas de Amposta a bit longer than the Figueras. Between them, they see me through to the first overwintering onions, which, like the Fuentes, I just use from the ground as soon as I need them.

Thanks Snoop, if I come across them I will give them a try, though whither I will have the ground for all the onions I want to try is a different matterit may be a struggle to reach the top, but once your over the hill your problems start.
