Grow some medium hot ones and just use a little bit instead of a whole one. After all, 7 pot peppers got their name because just one pod is sufficient to heat up 7 meals. You can also add a whole chilli to the pot when cooking and then remove it before serving, so it adds flavour but you don't actually eat it.
