It'll grow fine. Mine were all chitted and the volunteers in the bed were just poking through the surface so nature was saying it's time to plant in two ways.

Mine always start sprouting in about March. And I keep my seed tubers in the fridge. God knows how they know what time of year it is when they are permanently cold and dark, but each year they always start sprouting in the fridge, and that's when I know it's time to pot them up.
Admittedly, I don't usually finish harvesting them until the end of February. That may have something to do with it.
I'll be planting my potted ones soon, actually. Most are a good size now, and they've been hardening off outside for the last few days.
I've got a couple extras, too, from volunteers tubers I found sprouting. Two I even found sprouting in my compost bin, so I potted them up and now they are growing well.
I've been potting my Oca as they sprout, don't even keep them in the fridge, they have been sitting in a dry plastic tub in my kitchen. They appear to be quite stoic little plants and just as determined to grow as potatoes.
