How to save veg seed

I have tried to avoid buying F1 seeds (though some time the temptation is too great) so that I would be able to save seed If I want, but so far the only seeds I have saved are tomatoes and that is by simply spreading them out on a paper towel allowing them to dry and then folding them up and storing till the following year, so this thread is posted more for the benefit of other Grapes who may want to save veg seed though if you have an easy way of doing it I might give it a try after all I am what you might call a lazy gardener and it is easier to buy seed than save

Yes VC I have came across various Web sites which gives advice on how to save seeds like "remove tomato seeds and let them ferment then dry before storing" but what I was hoping for was tips on easy ways of saving the seed, as I said I spread tomato seeds on a sheet of kitchen roll allowed it to dry and stored till the following year, so what I was looking for was guidence on when to pick your seed and an easy way to prepair and store them, I have never saved any veg other than tomato, I know when to pick a lot of flower seeds but not sure about cabbage, lettuce or beetroot etc.

Some veg are in the ground for 2 years before they set seed and "tidy" gardeners don't like to see bolting veg in their gardens. Carrots and beetroot for example. Some veg have to be prevented from crossing with other varieties - like runner and broad beans.
The easiest are probably tomatoes, peas and lettuce.

These are Carrots setting seed - sown last year. As you can see, its not for a "tidy" garden.

The main 'seeds' I save are garlic and shallots, peas and beans and the seeds are quite dear for the quantity I like to sow. You just allow some of the better plant's seeds to mature and dry. They don't hog the ground for long either. Garlic and shallots not at all. I've already got my 500 peas for next year (40' worth) and broad beans, just french beans to go.
