Winter squash, which I really like, that may store for 10 months if need be.
Or cabbages, where I can probably cover 12 months of harvesting with 4 varieties.
Or French beans, that I can harvest fresh for a while before allowing pods to dry on the plants for storage.
Alliums, because there are so many variations. If you are going to hold me to one allium it would have to be onions which with spring and autumn planting can be on the plot for 365 days of the year.
PS It just so happens I love eating onions in all there guises, and they are very good for you.

To be honest, if I really could only grow one, I'd probably just stop growing. Could I have a whole family? If so, the allium family. Or maybe legumes. Or maybe... No, I can't possibly choose.
