Left my veg in over winter

I know that its a bit premature to be thinking winter is past, but this year I left my carrot in the ground rather than lifting them, though it has been wet it hasn't been to cold and today when I lifted some carrots, they have been grown under a envirofleece tunnel and normally I would have expected them to be mush by now due to winter action but they are still firm, smell and taste very good, now I don't know if it's due to the cover or if it's as Snadger mentioned in another thread global warming that is making the difference, I also lifted some radish which were sown in the end of September or start of October, again under cover and still edible

My hardy carrots (Nantes Frubund and Eskimo) are outside under insect mesh, and are fine.

The carrots are Autumn King and though they are marketed as harvest till December, they have never lasted till December in the past, that's why I was surprised at the quality of them but not sure whither it's due to being covered or winter being so mild

My carrots don't normally go woody & hairy (developing secondary roots ) until about March. Mine still seem fine up til now.

I too have carrots and Parsnips still in the ground, the carrots are in a raised bed though and under fleece.

It's the weather here in this area that causes that Snadger, its cold and wet so everything shrivels up
But in the past any carrots left in the ground were inedible by now the rain and frost just destroyed them

My carrots are keeping in the ground just my. Resistafly and Early Nantes. My beetroot are, too (in fact, they're not really even in the groud, seeing is the root is mostly exposed).
Although it is rather milder down here, I imagine.

My carrots are just starting to grow again, in fact, starting to produce fine white roots. They should still be good to eat for at least another month, though.

Mine are as well, but since the snow the other day I've moved the bucket they're in to my GH.

Harvested baby carrots left outdoors in a pot yesterday. No fleece or anything. The tops are a bit slugged but cut those off and they are lovely. It’s been so mild down here.

Must of been really mild so far this year. I've got baby tomato plants growing in the gravel of the floor of my greenhouse. I'll have to pot them up. No idea what varieties they are though

Last year we put lots of straw around carrots and a clear plastic on top. The carrots stop growing but stay nice and fresh, harvested until we ran out about this time of winter. we had a similar smaller example the year before that inspired the attempt.
This year We just didn't get enough into the ground soon enough so ran out at the end of November (and they were mainly small).
I note that farmers used this method or similar and harvested as needed for thier supermarket customers. They certainly retain flavour better than dru stored roots in my opinion.

This year I will plant loads so I have enough, a few beetroot with this method and more parsnips are also likely.
