Why do my swedes taste bitter?

First time I've grown swedes, and they're fine to look at. Someone said they might need a frost or two (like sprouts) to improve, but they've had that and still when I cook them the back taste is bitter. Any ideas anyone please?

Certain older varieties of swede, and especially those bred for "agricultural" purposes as opposed to culinary, may have a bitter taste, though most modern varieties available are now described as culinary and bitter-free. Do you know what variety you have ?

I've never had bitter swedes but I have had swede with course hard bits in them! I've always assumed this was because they were 'woody' and approaching the end of there shelf life?
