Storing vegetables?

I've got lots of kale and chard that need harvesting but we're not going to be able to eat all of it! Can I freeze it? And if so do I need to cook and then freeze, like I think they do with spinach?

I also presume that I can't store salad leaves...got far too many

You're right Gryfon, you can't freeze salad leaves but you can make soup and freeze it. Sautee some onion, add some curry powder if you like it, add the stock and a cup of frozen peas and plenty of leaves of whatever kind. Simmer for 20 mins or so and liquidise the lot. Serve with a dollop of yoghurt in the bowl. Very nice and very economical.

Your kale and chard leaves you will have to cook before freezing.

Gryffon - if you wash your lettuce in water and bung it straight into a plastic bag, so there's a bit of water in the bag, then clip it, it will keep in the fridge for at least 10 days. Make sure they are all good leaves.

I make lettuce soup - v e r y nice. I also give alot of chard away, everyone at work thinks its wonderful as they can't buy it in the shops!

What about potatoes?
I know you are supposed to keep them in a dry, cool, dark place. But without potato sacks, what should I store them in? I haven't got many but I don't eat many potatoes either. How long will they last? They are early swifts if that makes any difference.
