How big do you wait for the flowers to get?

Do you eat it raw? I used some last night (and have lived to tell the tail!) and steamed it, it was a bit bitter, I was wondering if it is best used as a stuffing or cooked with other things?

Clara 1, why not use it in a stir fry?

Clarea1, it might be a bit bitter as its flowered. we ate loads in mixed salad and it was lovely. Some bolted while my back was turned, so I tasted it before using and it had gone very bitter.
