Looks from your pic like you are about to eat it like an apple!

here in Azerbaijan aubergine is very popular and one of top veggies used in national cuisine. It's absolutely fabulous stuffed with mince on its own or in mix with stuffed tomatoes and bell peppers. Then there's vegetable ragu, fryed up with onions, tomatoes, perpers.

It's also very nice pickled with garlic (and stuffed with various herbs) and also great in soups and beef/lamb or vegetarian stews

I think I even saw Jamie cooking a starter very similar to our own - grill aubergines, tomatoes, (peppers if you like) on the gril or just gas cooker, remove charred skins, chop it all up, add some fresh onion, garlic, chilli if you like, herbs to your liking, season it and dress it with some olive oil (to taste), serve it as a started with warm bread....Man, I'm hungry and still at work....

He's lovely!!! I'm growing Aubergine this year Violetta di Firenze. Way behind you though, mine are only just getting their true leaves!!
Nestled somewhere in the Cambridgeshire Fens. Good soil, strong winds and 4 Giant Puffballs!
