      I only like the beans when they are small and so pick as they become ready. My own opinion is that if you left them till the pods started turning the beans would be very tough. Agree with two sheds.

        My husband always wanted to leave them till they were big, like his Dad used to. I harvest them small. He now likes them. He didn't used to. Small is beautiful!

          Suppose it depends on the variety too.
          We grew (and are growing this year) Bunyards Exhibition. They actually taste very nice when big and are not too tough.

          We also don't blanch them. We just shell them, wash in cold water, drain them, then freeze.

            Thank you all so much for your replies I can see it's not an exact science (lots of preferences) but that makes it even more helpful. I am going to try eating them large and small ( and will tap the pods) that way I can see how we like them best. I've lots of pods so expecting to have to do some freezing....advice about how to do that really helpful.....thank you again Truly Green
