Not sure what you mean by determinate. As far as I know Roma is a cordon type tomato - i.e. not a bush variety. If I'm right for the variety, then you need to put a stake next to the plant to support it, and pinch out the side shoots that will try to grow from the main stem in the leaf joints. They'll grow as tall as you let them but for practical reasons you need to stop them when they get to the roof of the greenhouse.
Determinate means that the plant can 'determine' it's own height - so it reaches a certain height & stops growing upwards, then branches out. So if it's determinate or semi-determinate, you should allow it to branch out.
