Picked a load of beetroot yesterday, boiled it up and it tastes wonderful. I'm going to pickle some but I would also like to make beetroot chutney. Has anyone got a good recipe?

Ingredients
900g/2lb Raw Beetroot, Grated
450g/1lb Onions, chopped
675g/1 ½ lb Cooking Apples, peeled cored and sliced
450g/1lb Seedless Raisins
1L/40fl.oz. Malt Vinegar
900g/2lb Granulated Sugar
2 tbsp Ground Ginger
Instructions
1. Place all the ingredients in a large pan and bring to the boil. Reduce the heat and simmer for about 1-2 hours or until thick and pulpy.
2. Meanwhile, prepare the jars (see notes below).
3. Spoon the mixture into warm jars, cover, seal and label (see notes below).
Jars - Use jars which are free from cracks, chips or flaws – the best sizes to use are 450g/1lb although 1kg/2lb jars can be successfully used for pickling fruit/vegetables. Prepare the jars by washing well in warm soapy water and rinsing thoroughly. Dry the jars in a cool oven (140C, 275F, Gas Mark 1). Fill whilst still warm to prevent the jars from cracking when the hot filling is added.
Filling and covering the jars – Fill to within 1cm/ ½ inch of the top. Whilst still hot, cover with a waxed disc (wax side down) , immediately place a cellophane disc over the top then cover with a screw top lid.
Storage – Store in a cool dark place for 2-3 months before consuming.

1lb cooked grated beetroor
8oz diced apple
8oz sugar
8oz diced onion
1/2 pint vinegar
salt
put all lower ingredients in pan simmer for 20 minutes or so
add grated beetroot cook for further 1o minutes then into sterilised jars
simple but it works for methis will be a battle from the heart

Can I ask when you know if your beetroot is ready to be picked? I have loads of beetroot plants that managed to get tangled up when they first started to grow so I'm afraid to pick one out in case they all get pulled out when not ready.
The leaves have also started to wilter. Mmm beetroot and chocolate sounds fab and the beetroot chutney!

Not chutney but this works well -
Cut cooked beetroot in to small pieces. Make up blackcurrant jelly with half red wine vinegar and slightly less than half specified quantity of water. Put beetroot chunks in to jar, pour in jelly, and allow to set.
Very nice with cold meats, salad, etc. Keeps well because of vinegar content but I refrigerate it after opening jar.Gardening is a matter of your enthusiasm holding up until your back gets used to it.

Hey the chocolate and beetroot cake was on bbc breakfast this morning. There was a lady on there with her son. She's written a book which incourages children to eat veg through recipes like the chocolate and beetroot cake!
Did anyone else see it? I didn't get a chance to write down the name of the book (trying to hoover at the same time!)
