    I have been away for 2 weeks (bad timing!!) and all my calabrese flowers have started to open. Is it still OK to eat them or are they destined for the compost heap. I wondered if I could make big pots of soup and freeze them, but is that a waste of time? Grumma

    Hi and welcome to the vine.

    I think you will find the calabrese rather bitter if many of the flowers have opened. You could try removing the open florets and cooking the rest to see. If you cut off the main head the plants might form side shoots (a bit like purple sprouting brocolli does) so all may not be lost.

      Thanks for super quick response!!! WOW! Had only nipped down the garden and chopped the calabrese heads. I am going to try using one head as you have suggested and if it tastes OK my freezer will be full of soup by lunchtime!! Pat
