    I made chocolate courgette cake last night, both my teenagers were raving on about it untilthey found it had courgettes in it. I had to show them the recipe before they would believe me. I am ,apparently ,evil

      chocolate courgette cake
      Preparation Time: 10 mins
      Cooking Time: 45 mins
      Serves: 6
      Ingredients
      120g butter (softened)
      125ml sunflower oil
      100g caster sugar
      200g soft brown sugar
      3 eggs, beaten
      130ml milk
      350g plain flour
      2 tsp baking powder
      4 tbsp cocoa
      450g courgettes, peeled and grated finely
      1 tsp vanilla


      Instructions
      This recipe is a great way of getting children to eat more vegetables and has been a regular feature on the lunch menu at Landscove Primary School and the children seem to love it.

      1. Line a 20 x 35cm baking tray with baking paper and set the oven to 190ºC/350ºF.

      2. Mix the butter, oil and both sugars together until light and fluffy. Gradually add the eggs, one at a time and then the milk until mixed thoroughly.

      3. Sift the dry ingredients together and fold into the mixture. Stir in grated and peeled courgettes, vanilla and spoon into tin. Bake for 35 -45 minutes.

      Savoury Cheese, Tomato and Courgette Muffins
      Makes:12
      Method
      1 Preheat the oven to 200ºC/Fan 180ºC/Gas Mark 6. Line a 12 hole muffin tin with paper muffin cases.
      2 Combine the flour, salt, courgettes and cheese. Season with freshly ground black pepper.
      3 Mix together the milk, pesto, egg and oil and pour into the dry ingredients. Gently stir together until just combined.
      4 Spoon the muffin mixture into the paper cases. Pierce each tomato with a sharp knife and put a tomato on top of each muffin.
      5 Bake for 20-25 minutes until well risen, golden and firm.
      Ingredients
      225g/8oz Allinson Wholemeal Self Raising flour
      ½ tsp salt
      100g/4oz courgettes, grated
      100g/4oz red Leicester cheese, grated
      175ml/6fl oz milk
      1 tsp pesto
      1 egg
      2 tbsp olive oil
      12 cherry tomatoes

        they are teenagers,is it not said they are meant to be tommy opposite,bet they still eat more of it,lol,iv'e yet to try this cake.

          Hey Hamster

          I made the choc courgette cake last weekend when my OH's family were over - everyone was really dubious at first about trying it, they were soon back for more. It would be lovely served warm with ice cream and some strawbs. It says that it serves 6, more like 16- it was big!

              I didn;t have a big enough tin for teh cake so filled 3 small pudding moulds as well, they ended up like muffins and were gorgeous! I was laughing because there were 3 lots of contented munching sounds and the odd mmmmmm, !

                Mm - can't decide what to make first - courgette cake or courgette soup!
                Might get the littl'un making courgette cakes while we wait for our new washing machine to be delivered on Wednesday

                  I've just bought a book 'What will I do with all those courgettes ?' by Elaine Borish.
                  All things being equal I should be ableto work through doing one each (at least.....) of the 150 recipes !
                  I'm picking around 12 a day at the moment, including the yellow ones (Parador) which make a very good salad. You cut them into thin strips with a veg peeler, and then marinate in a strong vinaigrette, preferably overnight in the fridge.
                  I'll try the cake as well..........

                    Hi Vajra - welcome to the vine!

                    How many plants have you got? I've got 2 Gold Rush and 4 All Green Bush (guess which colour is which lol) - the yellow ones are producing at least as many courgettes as the green, even though there are half the number of plants... (the packets were right when they describe Gold Rush as "vigorous" and All Green Bush as "compact"!)

                    Right now I've got 10 large courgettes waiting for me in the kitchen, and several smaller ones still on the plant. I'm doing the cake in a minute and probably the soup for dinner

                      12 a day? Holy Cow! I've got a few waiting to be 'used' in the fridge. Made a cake and the courgette loaf, so far. Am thinking soup might be next!
