salsify

I am growing salsify this year for the first time. They are doing really well, or at least the foliage is, if a little crowded out by my parsnips!
When will they be ready for harvest? Cant seem to find specific information on this one! They went in as seed at the end of April. Is it worth shuvving a finger in to see what the diameter is doing?

That's what i usually do with al other root veg. I just cought some seeds for this yesterday and I'm going to try it over the winter...not sure if it overwinters well but it's worth trying a few to see.

I can't offer any advice on eating them(just could never bring myself to fancy them!)but uors stayed in the ground over winter & I'm sure they can actually be given 2yrs to grow if one year was slow.Beautiful flowers!

No mine went in this spring! I will do the finger test tomorrow !
Have just looked in Gary Rhodes cookery year, he cooks themin october so maybe thats a hint, but he also has courgette in may!!!!!!!!!!! He says they taste a bit like asparagus??? I will be amazed if they do, but will keep you posted.OH says they are nice If I think they are yuk maybe i will grow them just for the flowers!

I found that for one decent salsify you have four rubbish ones, but very tasty another draw back is the sap from them when you peel them stains your hands like dandelion root
