now most of my potatoes and some of my salad stuff are out of the ground I have space where before my plot was stuffed full. What can I put in now to make good use of space?

I prefer to grow crops rather than green manures, but GM is better than nothing. Even cardboard/carpet is better than bare ground.
I've had winter brassicas coming along in cell trays, so they will be planted out as space is cleared.
Any further gaps will have Limnanthes or Buckwheat (GM) sown on them.

Manure/compost prepare the ground for overwintering onions/leeks/garlic.

You could still probably get away with sowing spring cabbage!

My rotation follows potatoes with onions so some overwintering types fill the gap well. I had a spare tray of leeks languishing in the greenhouse too which I hadn't had the time to put out. I've planted them this weekend at very close spacings in the hopes that I'll have some mini-leeks for around Christmastime, though this is purely experimental and I don't know if it will work.
A late sowing of carrots can be made now and pulled until February/March.
Spinach can be sown in September and has the advantage of going anywhere in your rotation.
