hello zoetaylor69 and welcome to the vine, you will find lots of advice & help on here, and yes you have posted in the correct place, unless you growing the longest bean for a competition it's best to pick them whilst they are 8 to 10 inch long,1 is they are nice and tender,2 if left to grow to long they tend to get stringy and will get very fat with the swelling beans inside the pod going to seed, the plant will then produce less beans,to pick them, gently pull or snip of,wash, trim of each end and any dodgy bits, cut up{i get on better with scissors}aprox 1 or 2 inch long, then cook your prefered way,you can also freeze your surplas, after preparation place them in a freezer bag,and place in freezer,no need to blanch,at the end of the season if you allow some pods to grow on until they go brown papery skins, then you will have saved some seed for next year,i was the same with aubergines, but am learning, nothing like the pleasure of growing, picking, cooking and eating what you have grow yourself, good luck zoe.

Kidney beans for use as fresh shelled you harvest when you see the seeds big enough through the pods, to use as dried, stored through the winter, leave as long as can, often you will need finish drying them indoors on the vine to prevent rotting.

Leave beans to dry on the plant.

If you manage to pick them fresh can then be frozen to eliminate the need for soaking prior to use.Still need a rapid boil to destroy toxins tho!

What is the best variety to use for kidney beans - i mean the ones you would normally use in a chilli for example?

Canadian Wonder are the ones usually recommended to grow as kidney beans in this country.
