  • Ripening lots of tomatoes at once?

I've managed to ripen a few toms in a paper bag with a banana but I've just been round and salvaged the last I'm going to get since blight has taken hold.

I've put them in a mixing bowl with two bananas and made a 'lid' out of baking parchment which is secured in place by string.

Am I on the right track here? as I understand it baking parchment should let it breathe so I should get the same effect as using a paper bag?

Yes this should work fine. From what i remember bananas release ethene which is a ripening hormone. As long as the banana is near to the toms it should help things along nicely .

i guess this is why ripe bananas shouldn't be kept it a fruit bowl because it causes things to go over ripe very quickly.,

It's very similar to what I've done with mine - they're in a washing up bowl with 2 bananas and a newspaper covering them - so I hope it works ok. I'm checking them daily to make sure none have started to go mouldy, but they seem to be slowly ripening and no rot so far (touching wood )

Dan, I just put the green tomatoes in a fruit bowl and leave it in the kitchen. They ripen fine. But I also like fried , green tomatoes so some of them just get used as I go along.

From each according to his ability, to each according to his needs.
