What a great last few days of the week:

Wednesday...got 10kg of Apples and some dorset Naga's....Made about 1.5kg of chutney which is already tasting good!!

Thursday....Made 2x blackberry and Apple Pies...and they turned out rather delicious!

Friday....decided to hunt for some sweet chestnuts, its turns out the biggest tree (its looks ancient and tall) at my works place is a chestnut tree...prickled hands later and i have a bag of chestnuts...which i've roasted, eaten and frozen.
I also found some last elderberries and blackberries on a walk with the dog!!


All in all a good 3 days....
Tomorrow i might shoot for some jam just to put the icing on the weeks cake!!

We were eating apple cake last night. Yum!
Peeled, chopped apples in the base of a dish, add brown sugar or syrup plus nutmeg. Then a basic cake sponge mix poured over the top. It is the new fave in this house (we are crumbled out at the mo!)
Also made apple sauce and apple and chilli jelly - see Merry's post, it's REALLY great!
Next week I have plans for apple and blackberry jam and apple and thyme jelly...Good time of year isn't it!

That apple cake sounds good. I assume you pour the sponge mix over and just bake as a normal sponge cake?
I am going to try that when I get back next week. Have a "friend" coming to stay for a couple of days so will be out to impress.

Yes, we didn't time how long we baked it, just till it looked golden on top

ok...made tomatoe and chilli chutney today...very spicy..very nice!!

Another version of apple cake - rub in half fat to SR flour (quantity depends on how big a cake you want!) and add chopped/grated apple - I use same amount of apple as flour (- 2) eg 8oz flour = 6oz apples (not very scientific but it works; if you want it very appley you can use equal amount). Same amount of sugar as fat (I like soft brown sugar). Loads of cinnamon and a handful of sultanas - if you like. Then 1 -2 eggs to bind together - should form a soft dropping consistency. Baking tin in oven (I cover top for first 40 mins or it can get quite dark and crispy) at approx 175 for about an hour. It's even nicer if you can resist cutting it for a day or 2 (keep in a tin). An apples will do - eaters, cookers etc.
