  • Radish pods

I seem to remember seeing something on here about pickling radish pods - or even eating them fresh.
    cant find it though.
Please can someone refresh my memory.
what pickling liquid to use and how long will they keep,
    thanks in advance.

You're reminding me, I pickled some last year, haven't tried them yet though!
But I just used the same pickling liquid as for the batch of cucumbers which were done at the same time.

I did mine lacto-fermented. You just wash them, pack them into a sterilised jar with seasoning of your choice (I just used black peppercorns), and pour in a 2% salt solution (boil the water to drive off the chlorine, dissolved the salt 4 level teaspoons per litre), then lid and leave at room temperature for about a week, or until they taste about right to you, then transfer to the fridge. They'll last pretty much indefinitely in the fridge. Lactic acid bacteria grow in the salt solution, and the lactic acid they create preserves the food, as well as changing the flavour somewhat.
Be sure to allow the salt solution to cool to room temperature before adding it to the jar. If you add it even warm, much less hot, it will kill the good bacteria and the jar will just go bad. Also be sure to keep all of the pods below the water level. You may need to use a weight (also sterilised) of some sort.

They can also be pickled in vinegar, but I've never tried that.
