I wonder if you could use it in a soup, ameno. I make a spiced carrot and apple soup and a cauliflower with pear and blue cheese soup. Might yacon work in those? (The cauliflower soup is really nice, a lot better than it sounds.)

Pulled the last swede on the weekend. We enjoyed it with some sausage, mash & onion gravy last night - I was thinking of you ChingfordHarry as it was decently swedey (being so long in the ground)Location: SE Wales about 1250ft up
