This looks like a good use for the peas I had left over from last year. I wasn't impressed with them as peas, they tasted 'harvested' even before they had filled the pods. Perhaps the shoots will be tastier!I could not live without a garden, it is my place to unwind and recover, to marvel at the power of all growing things, even weeds!
Now a little Shrinking Violet.

Where can I learn how to do whatever it is you're all doing?
Is it that you sow peas and cut the tops before they flower? Can you eat the stalks?
Sorry for being Hignorant! My hopes are not always realized but I always hope (Ovid)

Maytreefrannie, the pea shoots are just the shoots from peas. They grow on the windowsill. You can cut the green shoots and eat them, cooked or raw. They taste like fresh peas and give you something homegrown when you might not have much else. And they're dead easy.
Take a pot (any size you like) and fill it with compost. Warm the compost if it's been lying out in the garage. Soak the peas in tepid water, or not.
Plant the peas, shoulder to shoulder in the compost and cover with about half an inch compost.
Put the pot on the windowsill and wait for your shoots. Cut them any size you like. After they're cut they will shoot again - maybe once, and if your lucky, twice.
Good luck.
From each according to his ability, to each according to his needs.
