I planted 3 varieties of store potatoes last year. Basically I planted them because they had been forgotten in the cupboard and were growing wild anyways! None of them had a very high yield, but I could put that down to not enough nutrients in the soil (I didn't add compost) and early blight as much as I could put it down to being from the store.
If you have spuds and they are sprouting too much to eat, why not plant them? I have a head of garlic that is likely going to get planted too, since it looks set to flower in my cupboard, haha. But I wouldn't go out of my way to use eating potatoes vs seed potatoes.
