Celeriac

1. Do I need to earth them up?

2. How do I get them to grow as big as the ones I see in the shops? We had a good crop last year but they were, well, small yet perfectly formed.

You don't need to earth them up but you do need to keep removing the stems apart from a few at the top. That way the growth goes into the celeriac rather than the stems.
