Earth up spuds in pots, Use it as mulch else where (if you have a garden), recompost it on a heap. Mix in with some fresh compost or leafmould (and plantfood) to fill containers. If it has soured you can also refresh it by adding a small amount of charcoal. (a good trick is to pop a bit in the bottom of all long use pots anyway)
In theory it will be fine to reuse but it will be fairly stripped of nutrients and as with any rotation it is wise to avoid repeated related crops because of persistent diseases.
