It's spelled cavalo or cavolo nero, which might be part of your problem in finding it. Seeds of Italy is where I got mine:Seeds of Italy - CAVOLO NERO OF TUSCANY
I always call it Tuscan Kale and I love the stuff!

As nelliegemini says, you can treat it like lettuce - I pick off individual healthy leaves when they are about 6" long, and the plant just keeps growing upwards to try and escape the predation
And if you can resist eating it all before the end of February, the flowering stem can be eaten too, like sprouting broccoli - yum!
It does take time - mine was planted out on the plot in Jly and I started the harvest in December. Still picking it now, it's about to flower so will eat those like PSB spears.
I used it as a summer crop - sown in April and was eating young leaves from July until mid-winter. As you can see from this and previous posts, it's a versatile crop and if you sow in Spring and again in Summer you could have it most of the year.
