That does sound like a lot of work.
Given that you have an incline, once you start adding organic matter I don't think you are going to have many problems. Remove the larger stones, take others out as you go along, keep adding compost and muck whenever it comes to hand. Most plants are going to do all right, I would think, just don't grow any that need stone-free soil (carrots) or dry conditions (some herbs) - save them for the other patch!
