    I've still got loads of beetroot in the ground will it be OK? I don't really have anywhere to dry store it and I can't seem to find many jars to pickle it in either.

      We eat as soon as ready.Step-dad made wine,but I've still got some in ground and no storage space so I would like to know answer to Nickys question to!

        Get pickling! Don't really know, they are not like spuds and will more than likely rot or get attacked but may be wrong but think of all that pickled beetroot!

            For cripes sake DON'T use Sarsons pickling vinegar!

            Bought loads from Tesco's (buy one get one free or something) and pickled some beetroot. B-a-a-a-d move! The vinegar is so strong it has totally crippled the beetroot taste.
            You know how vinegar crisps sometimes make your eyes water?..... Multiply that by 10!

            Can you use a wine vinegar with a more delicate taste that won't overpower the taste buds?

            Got some small red onions and cukes to pickle but am woried will loose the skin off my mouth if I try eating them!

                Not sure how long you can leave it in the ground but I've heard that if you dig it up, chop the leaves off you can store it in damp sand for a month or two. Going to try this with mine as I'm not keen on it pickled and have way too much to eat in the next week or two!!

                  They can stand light frost for a while, but will turn to mush if left in situ over a very frosty spell. You could try fleecing of course if you want to leave them in for a while longer.
                  We are going to try and store some of ours in either a peat based or sand layers- got fed up of eating pickled beets - much prefer fresh!!.
