Nip the immature flower/ seed head off with a pinch and they will continue to grow and swell, but wont store, so use them first or process and freeze for later use!Blessings

Generally speaking over wintered onions are not grown for storing, they are to try and get an earlier onion available before the summer onions are ready. I notice mine have started to swell nicely and will be starting to use them this week. Luckily I have not noticed any going to seed.

My over-wintered onions (from sets) are beginning to bolt too, before they've fattened up. They shouldn't be ready until June, but I am going to use them as spring onions, I don't mind.
