French beans are picked when they are young and green and you eat the whole pod.
If the pods are left to ripen fully and the beans are dried and stored, they are known as haricot or kidney beans. French Beans - how to grow varieties of Dwarf Bean
There are many other varieties of this type of bean including cannellini, kidney, flageolet (half-ripe pods, beans eaten while green, like peas) & haricot (dried) beans. http://www.rhs.org.uk/SCHOOLGARDENIN...ans-wl_476.pdf
While the French still use 'haricot' as a general name for a bean, the English use it now only for the small, white, dried bean. You won't find a variety of bean called "Haricot", although the dried seeds of Blue Lake (there are others*) are white beans, like the ones you buy in the shops.

beans
I have just planted my haricot beans. The variety is yin yang. You can get them from Marshalls (I think) and the Eden Project. Last year we ate them like french beans and they are wonderful, and have their own special taste. When you see the dried seeds you will see how they got their name. I THINK June is the sowing month for them. There's pleasure sure in being mad that only madmen know - Anon

You can find "Yin Yang" in both colours. Mine are maroon and white, but were sold in a packet as Yin Yang.
I also have Orca, which is the same but black and white. All gardeners know better than other gardeners." -- Chinese Proverb.
