I planted some seeds on monday and i cant wait to find out if i did it right or not. I know that its only been 2 days and i know they would not come up that fast. What i would like to know, however, is how long would it take for me to see something that would let me know i did it right. So how long would it take for radishes, fennel, lettuce, spring onions and herbs to show something over ground? I know that the herbs and the lettuce would keep on growing when i cut them and that there is no way to keep the radishes growing after i pull them out(see im not a total noob lol). What i also want to know is if there is a way for me to cut the spring onions and fennel in a particular place to allow new growth after i picked them such as 'propagating by root cuttings' or just by cutting them so the roots stay underground.

It varies between seeds and the conditions. Radishes are usually very quick they might come up in 3 days.
You pull up spring onions and eat the whole thing. You could leave them in the ground and eventually they would flower then produce a seed head which you could save seeds from.
With things like lettuce and radish you need to sow a few more every couple of weeks to keep a regular supply.
