Leek plants

We are trying to save the seeds from our leeks this year.

The plant has just about burst out of the paper covering, I assume we have to let the bees come in and do their pollination thing but how is it best to collect the seed and when is it best to do so??

My neighbour on the allotment told me he tried it one year but the seeds all went on to the floor and he lost them.

Would a paper bag work, but when would the paper bag go over the top as we dont want the seeds to rot.

Wait until they lose all colour, and you can see the little black seeds ready to fall out of the heads. Then, either snip the heads off and put in a bag or put a bag over and tie it and snip a week or so later. I wait until they are falling out and then snip, and I have trays in the greenhouse where they are put until totally dried out.

If they fall out, they will germinate and you can move the seedlings when they are an inch or 2 high to where you want them.
