  • fresh red kidney beans

    I have grown kidney beans for the first time this year, and was wondering whether they were safe to eat fresh. I realise that you cannot eat undercooked dry ones due to toxins within the bean, but is this toxin concentrated during the drying process, or present in the fresh beans.

    yes, it is still present in all French beans. Less so in the fresh green bean, slightly more so in the "shelly" bean, and most of all in the dried red kidney bean

    The advice is to boil all of them for 10 mins (though Grapes on here will say they've eaten raw beans all their lives with no ill effect ... I've had kidney bean poisoning thru undercooked beans, and it's very unpleasant)
