My second lot of potatoes are appearing above ground, should i dig them up or keep earthing them up until the leaves start to fade, its our first year so any help would be appreciated

Appear above ground? what the actual spuds?....keep them earthed up until you need to dig them...any exposed to light, at any stage, will go green and any green bit is poisonous.
New spuds are ready anytime and are normally big enough when the plants flower. For potatoes to store you let haulm die back(or cut off) and leave the spuds a couple of weeks for the skins to set.
