Advice Please

Hi all
I'm new to the site and wanted to pick your brains. My veg plot is slowing down now and am thinking about what to plant overwinter and early next year, the problem is I will be away for the whole of next August and no-one will be able to tend my plot. I do not want to return to giant courgettes massive weeds and loads of things going to seed. What can I plant that will take a month of neglect and be ready to harvest on my return, I plan to use mulch extensively to attempt some sort of weed control the battle against them this year has been long hard and sometimes bloody (Hoeing in flip flops).

But August is peak harvesting time? Everything will have gone over by the time you get back, the tomatoes will be dead from blight, unless it gets looked after a bit, I can't see how it's going to work.

Edit, thinking about it, winter squash would work, keep the weeds down as well. How many squash do you want for soup next winter?

Brassicas, carrots, parsnips, onions, beetroot, will all grow happily untended. Anything else that doesn't produce fruit, basically.

Sweetcorn and squash, with beans that you leave to shell rather than eat as green. Plus peppers and chilis. Plus the above.

See, I don't think brassicas can grow unattended, even if netted, butterflies often get in and slugs can destroy them all if they aren't watched. You may be lucky though.
Sweetcorn you have to watch when they are ready, no point coming back to a load of gone over corn.
I think you're right with the rest and zazens stuff, it's still suck it and see whether your stuff will be OK when you get back though.

My sweetcorn is only just getting ready for picking now so as long as you don't plant too early it will be great for when you get back.
