I bought some Chinese single clove garlic in Lidl recently and was wondering - if I planted some would the only grow into a single clove or would it grow normally (split into lots of cloves)?

If they're harvested in winter, they produce rounds, immature heads. As the garlic starts to form a head, it swells first, then divides. If you pull it before it divides, you get rounds.
They tend to keep very well, and they're certainly easy to peel. I suspect certain varieties provide rounds more reliably than others, but you can do it with any of them.
