I have had great success last year with a soup to preserve lettuce & cucumber. Mostly they're served cold but this recipe is served hot and tastes very fresh. Just what you need in the depths of winter when you cant remember what a salad smells like!
1 small lettuce, shredded
1 cucumber diced (dont bother to peel)
1 medium potato
few spring onions chopped
big knob butter
veggie stock
Sweat salad stuff in butter til just soft (about 10 mins), add about 2 pints veg stock, simmer for about 30 mins, blitz and season to taste.
Couldn't be easier and freezes really well!

I have just about run out of onions now: the 30 or so hanging in the garage are starting to sprout.

I only grow salad tomatoes for eating fresh, but you could turn them into sauces if you grew lots
Lettuce can be picked nearly all year round if you choose different varieties. I have a baby 'Rusty' in the ground now, it's survived weeks of frost & snow
