growing cress from food supplier

hi

ive just recieved some

;astina cress, basil cress, borage cress, broccocress, chilli cress, daikon cress, ghoa cress, honny cress, limon cress, mustard cress, rock chives, rucolacress, sakura cress, salicornia cress, sechuan cress, and a few more samples.

ive read that cress will need to grow for a year and it will flower in the second season, some of the other samles like the rock chives and the salicornia cress look abit different to the others im presuming the will just flower at the same time as the other cress

im wondering if i was to let them flower and seed and grow them from the saved seeds, would it be safe to use.
i've read all the information and i cant see any information about if they are hybrid or whatever.

any tips on caring for them and above the question would be greatly appreciated

I think you have a batch of microgreens there, mattyod - which you grow for the young leaves only and harvest before they form anything like plants. So you have real seeds for basil, mustard, rocket and so on - which you can grow on to full sized plants - but have been sold to you to grow as these little shoots in the form of 'cress'.
And it all sounds like a very interesting idea - I can remember seeing Carol Klein munching her way through a few sample seed trays on a programme last year or the year before! Apparently the tiny seedlings have a more intense flavour than the finished plant.
