How much damage do pidgeons cause on a veg patch?

Ive heard they eat brassicas, but not sure on other crops, we have around 8 or 9 pairs in the trees in our garden and im just worried that tey will fancy large lunches eating the plants.

If I caught them and released them elsewhere would they just return or des it need much more careful observation, I am going to cover the patch with net, or should I make pidgeon pie with them?

Depends on the type of pigeon, feral or street pigeons aren't good to eat. Woodpigeons however are a much prized delicacy, though I have never eaten it (yet).
I'm not certain, but as they are classed as a pest, if you catch them and release you may be commiting an offence, in much the same way as if you caught and released a rat or a grey squirrel.

They come back. If you shoot them others will come. All you can do is make netting cages.

How exactly were you proposing to catch them?
