  • First asparagus

    I started growing some asparagus two years ago. Yesterday I harvested my first crop, steamed them and served them with melted butter. Although a simple recipe they were absolutely delicious. Any recommended recipes?

    With crispy pancetta and hollandaise sauce. I'm drooling now!

      roll two of them in parma ham and lightly fry in olive oil...great...

        try Delia Smiths's recipe for Asparagus with foaming hollandaise sauce. Absolutely delicious . You can probably find the recipe at delia online - its in her Summer Collection. And it is quite straightforward.

          There's always quiche...but a good addition to stirfry or pizza, or a parmigiana, cheddar and grass soufflé ... and all the sub standard stuff stalky bit can get used in soup for the freezer

          yet mainly I think butter and lemon is still the best...why muck wiv anything so good?

            For me you can't beat those lightly steamed spears dipped in a soft boiled egg. Asparagus soldiers, mmmmmmmmm.

                Congratulations on your harvest!

                We had some yesterday dipped in boiled eggs for lunch, then I made asparagus risotto in the evening.

                I fry pancetta with the onion to start it off, then white wine and chicken stock, and only add the asparagus right at the end so it's just very lightly cooked.

                Love the stuff!
