I'm verging towards nipping out some of the flowers but I think you're right, any seed heads would need to go. I hear the flowers are quite attractive in themselves too. I've sown the rest of the packet and have two more seedlings to come on too so all wouldn't be lost if I get it wrong!
I thought it might be too early to blanch them in the first year, like rhubarb and asparagus I thought they might want to build up a bit?
