I planted a rhubarb last year and it's now doing great - so much so that it is casting shade over my parsnip seedlings. Can I harvest it now? If I pull up just enough to make a decent crumble and leave two or three stalks will it keep pushing them up all summer, or do I just harvest the whole thing and wait till next year for more?

Don't take all the leaves as they feed the base.
You can pull the leaves through to the end of June- and then they start to go bitter.
If it's your first year don't take too many.
I'd normally say don't take any in the first year- but it sounds like it's growing really well....so a few would be fine!"Nicos, Queen of Gooooogle" and... GYO's own Miss Marple

Take the ones that are casting shade over the snips, or you could hold them to one side with sticks. Next time you know to sow things further away from the rhubarb, they can get very big!
As the above said, leave some stalk and leaves on to keep the plant growing well.
Imagine you were the rhubarb, what would you be happy to have left to carry on growing strongly?"Orinoco was a fat lazy Womble"
Please ignore everything I say, I make it up as I go along, not only do I generally not believe what I write, I never remember it either.
