Beetroots, and beetroot leaves.

My tub of beetroots were sown thinly sown so I havent thinned them after reading they push eachother apart when the root grows - is this correct?

Also - is it ok for me to use a few leaves from the beetroot plants for salads without affecting the root growth? I have picked the odd few leaves being careful not to pick too many off of individual plants.

Yes they do push apart and I pinch a few leaves off now and then!
