They will cross pollinate even if in different beds; you have to do them by hand if you want to save the seeds.

I never really understand how hand pollination works. How can you be sure that the (birds and) the bees haven't got there before you?

Surely there's always a chance that they'll already be pollenated by the time you get to them, and then they won't be pure.
