Spinach beet ( perpetual )

Hello everyone,I am a newbie to the Grapevine and gardening,this being my first full year of growing veg.
I have some spinach beet,sown in April and growing well,but yesterday I noticed that 3 or 4 of the plants seem to have bolted and look like they are about to flower,what has caused this to happen? They have been well watered and are in some shade for part of the day.Can you still eat parts of the affected plants or do I need to dig up the whole plant.Thanks for any advice.I have enjoyed reading all the posts on the forums the last few days.very informative. Ann

Mine have too. They don't like hot dry weather, they grow better for an autumn or a spring crop rather than a summer one.

Pull off the flower heads and keep eating the leaves as long as you can

A load of mine did this, and due to some bad planning they were so tall they were shading and starting to squash my leeks.
I uprooted several and cut the others down to the ground. They've now started sprouting new young leaves again.
