What's going on, I may have jumped the gun but I pulled a parsnip yesterday, it had over 3 foot of folage & a 3" long nip........

My parsnip is also 3ft high and falling over, so I pulled one to have a look. Nearly 7" and quite useable. I'm going to have to put some supports round them.

Parsnips put on a hell of a lot of top growth before they really start to increase their root size so don't be fooled - I have 4 rows all with between 2' and 3' of foliage but they won't be touched til at least November.
I wouldn't dream of pulling one now - this is so not the weather for parsnips, besides haven't you got enough on with cabbge beans courgettes etc They taste so much better after a cold snap too. We had some in the autumn last year and they were ok but later in the year they were much sweeter. Step away from those 'snips

I think it's to do with the cold breaking down the starches into sugars... or something anyway it's true, totally true
