the sets I planted this year did break into bulbs, but they're all quite small, not much bigger than the sets I planted.
Do I have to do anything special to these to keep them for planting next year, or will they rot/sprout too early/be not worth it?

I still have some hung up from last year that haven't sprouted yet so I would imagine if you kept them cool they'd store until next Feb.

Shallots usually keep very well and are best planted in February. Planting large shallots gives a lot of small shallots so your small shallots should give two or three large shallots per set next year!
