  • Coriander Seed

I have allowed some coriander to flower and now the flowers have died back I can plainly see the seeds. Do I harvest now, while the seed is green, or do I wait until the head is completely dry? Also, can I cook with them straightaway, plant for another crop straight away, or do I have to wait until next spring? Never done this before and I'm not sure I've posted in the right place, but I'm sure I'll be moved if I have!

The ones you buy in spice jars are brown & dry, so I would guess harvest them when they look like that.

I would cut off the head and place in a paper bag until the seeds are completely dry.
